5 Braai Tips From the Butcher
- Room temperature first. Take meat out of the fridge 30 minutes before braaing. Cold meat doesn't cook evenly.
- Hot coals, no flames. Wait until coals are white. Flames burn the outside and leave the inside raw.
- Don't press the patties. Pressing squeezes out the juice. Leave it alone.
- Salt steaks 40 minutes before. Salt draws moisture out, then it reabsorbs — making the steak more flavourful.
- Rest your meat. 5 minutes off the grill before cutting. The juices redistribute.
