How Lamb is Graded in South Africa
South African lamb is graded based on age and fat content. The grading system uses letters and numbers:
- A grade — Young lamb, no permanent teeth. The most tender.
- AB grade — Slightly older, 1-2 permanent teeth. Still good.
- B grade — Older sheep, tougher meat.
- C grade — Mature sheep, toughest.
The number (1-6) indicates fat content:
- 1 — Very lean, almost no fat
- 2 — Lean with light marbling — the sweet spot
- 3 — Medium fat, good for slow cooking
- 4-6 — Increasingly fatty
Why A2 is the Best for Most People
A2 grade means young lamb (A) with lean-to-light marbling (2). This gives you:
